What a Dietitian Serves With Stuffed Peppers

Stuffed peppers are one of my favourite dinners when I'm looking for something quick and easy (especially if you make my air fryer stuffed peppers). Not only are they so easy to customize with different protein and spice options like my buffalo ranch tuna stuffed peppers or philly cheesesteak stuffed peppers, they are also a great addition to a balanced meal.

As a registered dietitian I love that stuffed peppers are a great way to add some vegetables, protein and carbohydrates into your diet!

How to create the perfect nutrient-dense stuffed pepper

  • Protein: Try opting for a lean ground meat such as ground turkey, ground chicken, lean ground beef or even a plant based option like my vegetarian stuffed peppers to help decrease unwanted added saturated fats!
  • Carbohydrates: Not all stuffed pepper filling contains a carbohydrate but many do! If you are looking to increase the fiber of your stuffed peppers try choosing a higher-fiber grain such as quinoa, brown rice or whole wheat couscous!
  • Vegetables: Obviously the bell pepper is a great vegetable option on it's own but you can also add shredded or diced veggies directly into the filling blend as well!

Stuffed peppers can be a great meal option on they're own but I always like to add a little more bulk to my meals to help keep me full and satisfied for a longer period of time! This is where the sides come in.
