Introducing my go-to cake; Donna Hay’s Melt and Mix Cake. Awesome as a cake, perfect as muffins/cupcakes. It never disappoints.

I used to make it as muffins once a month as a nanny. It was great for lunchboxes and afternoon tea treats. It’s the kinda cake that uses just one bowl, doesn’t require getting out any electric mixers and can be made in minutes. Oh, and it tastes good too.

The weather here has been oh-so-miserable for about 5 weeks. I’m talking constant rain, winds and flooding around town as well. The news is filled with updates on the weather. You can see people struggling, and it’s just taking it’s toll on people’s spirits.

It’s also the kind of weather that is perfect for baking and making things, so yesterday I called up my go-to cake recipe for another run. It had been a while.

Melt & mix chocolate cake

Ingredients

Scale

250g butter, melted
3/4 cup cocoa powder
1 1/3 cup caster sugar
3 eggs
1 1/2 cups desiccated coconut
1 1/2 cups plain flour
1 1/2 teaspoons baking powder
3/4 cup milk

Instructions

1. Preheat your oven to 180 degrees Celsius. Grease a cake tin {I used a round 24cm tin} and line the base.
2. Place all the ingredients into a large bowl. Mix until completely combined.
3. Pour into your prepared tin, and bake for 50 minutes.
4. Serve warm or cold, with cream or ice cream. You can also cover the top with icing if you’re feeling indulgent.

  4. The weather has been pretty sad in Sydney too – it’s really rainy. We’re off on holidays to Bali and apparently, it’s raining there too! There’s nothing that cake can’t make better and there’s nothing more fun on a rainy day than a bit of baking. I love Donna Hay and I love this cake! Yesterday, I made our favourite mixed berry and yoghurt cake – also super yum!

  6. Oh that sounds like a perfect cake for the rain/wind that we are having here!! Last night the wind was too strong so hubby had to get up and wind the awning back into the motorhome – we wished the rain would stop….and yeah Cake sure would make it better – will have to go and buy the ingredients to try out the Donna Hays Melt Mix Chocolate Cake 🙂

    • I’ve never seen sweetened, so just normal. 🙂

  18. Made this cake today for my dad birthday/fathers day morning tea. Super easy (melt ‘n’ mix rocks) and very rich. I swapped the caster sugar out with brown sugar and served with sweetened marscapone and fresh strawberries. Lush.

  20. can i avoid dessicated coconut.Will it still taste good

  21. Fan forced oven so do I cook at 180 or less?
