We are looking for cream with the highest fat content we can find... no half and half or Vitamin D milk.

These sweeteners mimic the sweetness of sugar without the high carb content, and they don't raise blood sugar levels, aligning perfectly with keto dietary needs. I do not use artificial sweeteners, so you'll have to do some experimenting if you want to use those.

  3. Vanilla Extract: A dash of vanilla extract enhances the overall flavor of the whipped cream, adding a subtle aroma and depth that complements the creaminess. Is a stand mixer or hand mixer better for keto whipped cream?

Both stand and hand mixers are great for making keto whipped cream. A stand mixer is more hands-off and can handle larger batches easily, while a hand mixer offers more control and is perfect for smaller quantities. The key is to start with everything chilled well, begin the process at a lower speed and gradually increase it to avoid over-whipping.

A big mistake a lot of people have made over the years is to start the mixer at high speed. It creates a mess at best, and doesn't result in next level whipped cream at worst.

What if I get a grainy texture with my keto whipped cream?

A grainy texture usually happens if the sweetener hasn't dissolved properly. To avoid this, use powdered sweeteners instead of a granulated sugar substitute as they dissolve more easily. If you find the texture is still grainy, gently re-whip the cream to smooth it out, or let it sit for a short time to allow the sweetener to dissolve fully.

STORING YOUR WHIPPED CREAM

STORAGE: Storing your Whipped Cream is simple but essential to maintain its quality. The best way to keep this delightful topping is in the refrigerator. After preparing, transfer the whipped cream to an airtight container. It will stay fresh and hold its texture for about 2-3 days. Just give it a gentle stir before using if it separates slightly.

Keep in mind that it is CREAM we are using. As it gets warm, it will begin to melt. It is important, as with all dairy products, to keep it refrigerated.

FREEZING: It's generally not recommended to freeze Keto Whipped Cream. Freezing can alter the creamy texture, often leading to a separation of the milk fat and liquids upon thawing, resulting in a less desirable consistency. Instead, it's best enjoyed fresh or stored in the refrigerator for a short period.

Now, using the FREEZER to create this recipe or keep it chilled temporarily is another story. Chill your large mixing bowl in the freezer and once the whipped cream is made, you can keep it in the freezer for a few minutes to get it really cold. Just don't forget to take it out before it freezes.
