Any time I make one of my favoritesoup recipesor hearty stew recipes, I must have a thick slice of bread to sop up all the goodness left at the bottom of the bowl. I absolutely must. This is that bread! Irish brown bread has this deeply nutty, complex, almost malty taste to it that is so beyond delicious. It's also endlessly versatile. Serve it fresh out of the oven slathered in jam and your favoritebrand of butter, or toast slices with some good cheddar (Irish cheddar if you can find it!) for an open-faced grilled cheese sandwich to dunk in Irish stew. Ingredients

  • 2 Tbsp.

    salted butter, melted, plus more for the pan

  • 1 c.

    rolled oats, divided

  • 3 c.

    whole wheat flour

  • 2 tsp.

    baking soda

  • 2 tsp.

    kosher salt

  • 1 c.

    stout beer, such as Guinness

  • 1 c.

    buttermilk

  • 1/4 c.

    molasses

  • 2 Tbsp.

    honey

Directions

    1. Step1Preheat the oven to 350°F. Butter a 9-by-5-inch loaf pan. Roughly chop 1/4 cup of rolled oats.
    2. Step2Evenly coat the bottom and sides of the pan with the chopped oats, tapping out any excess and reserving them for the top of the loaf. Set aside.
    3. Step3In a large bowl, whisk together the remaining 3/4 cup of rolled oats, flour, baking soda, and salt. Make a well in the center of the dry ingredients. Add the melted butter, stout, buttermilk, molasses, and honey. Stir until just combined, being careful not to over mix. Transfer the mixture to the prepared pan, smooth the top with a small offset spatula, and scatter the reserved chopped oats over top.
    4. Step4Bake until a skewer inserted into the center of the loaf comes out clean, 45 to 50 minutes. Allow to cool for 10 minutes, then remove from the pan and transfer to a wire rack to cool completely before slicing.
