Hard pretzels were first invented by Julius Sturgis, the owner of the first commercial bakery dedicated to pretzels. In the beginning, he made soft pretzels like most other bakeries. However, wanting to extend the shelf-life of his pretzels, he decided to reduce the amount of water used in the recipe. By doing so, he created the first hard pretzel. The lack of water created pretzels that were drier and more brittle, meaning they wouldn’t go stale as quickly.

Soft pretzels have a shorter baking time

Another way hard pretzels and soft pretzels differ is that soft pretzels have a much shorter baking time. Soft pretzels can usually be baked in 15 minutes; hard pretzels, meanwhile, must be baked for up to an hour. The longer baking time further dries out the pretzel. And, as we have discussed, the lack of moisture is what gives the hard pretzel its brittle texture.
